GRAND JUNCTION, Colo. – Digital Reporter Jasmine Waples brings you into her kitchen to make a ‘Lovers Lasagna’.
In this quick and easy recipe Jasmine breaks it down from sauce to sausage. Best served with greens and garlic bread, this dish is a perfect Valentine’s Day meal for two.
- chopped tomatoes (canned works as well)
- red wine
- 1/2 yellow onion
- 1 egg
- Italian sausage
- 1 pkg oven-ready lasagna noodles
- olive oil
Preheat oven to 425 °
Chop onion and saute in skillet pot with olive oil. Saute until translucent. Add in chopped tomatoes, salt and pepper. Pour in wine and let simmer. Add basil, salt, and pepper to taste. Mash tomatoes as they soften. Let simmer until assembly.
Cook Italian sausage until brown. Add pepper and chopped rosemary when meat is almost finished cooking. Set aside.
While the sauce and meat cook you can put together the ricotta mixture. Combine ricotta, parsley, pepper and egg in a bowl. Mix until smooth. Set aside.
Slice mozzarella. Set aside.
Spoon sauce onto the bottom of your baking pan. Layer as follows;
- Noodle, sauce, meat, Parmesan
- Noodle, ricotta
- Noodle, sauce, spinach, Parmesan
Continue to layer until you are satisfied. On the top layer cover top noodle completely in sauce (to keep noodle from drying out in oven). Place mozzarella slices and Parmesan cheese. Sprinkle basil and top with a sprig of rosemary.
Cover in foil and bake at 425 ° for 45 minutes.
It is optional to broil uncovered at 500 ° until cheese browns. If you do this be careful not to catch rosemary sprig on fire.
*Remove sprig of rosemary before serving.
