Let’s start with ingredients, for this dish you will need:
1 lb pinto beans
8 cups water
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne powder
Salt (adjust amount to your taste)
Cilantro (adjust amount to your taste)
Now that we have our ingredients, we will start by adding the beans to a large pot. Cover the beans with 6 cups of water and bring it to a boil. Cover the pot and let it simmer on low for 1 hour. Add the remaining water, cumin, smoked paprika, garlic powder and cayenne pepper and then stir. Bring it to a boil.
Once the pot is boiling, let it simmer on low heat while covered for an additional 1-1.5 hours, stirring occasionally. Taste the beans and add the salt, adjusting the seasoning as needed. Top off the dish with cilantro and that will complete your Mexican Pinto Beans!
